Lemon Cheese Cake Recipe (柠檬芝士蛋糕)

Base
250g crushed chocolate marie biscuits,
1 tbsp brown sugar,
120g melted butter.

Filling
750g cream cheese,
150g caster sugar,
4 eggs,
230g sour cream,
2 tbsp lemon juice,
2 tbsp corn starch,
1 tbsp grated lemon rind


饼底
250克 巧克力马利饼干碎,
1大匙 黃糖,
120克 溶化牛油。


芝士餡
750克 奶油芝士,
150克 细砂糖,
4个 鸡蛋,
230克 酸奶油,
2大匙 柠檬汁,
2大匙 粟粉,
1大匙 柠檬皮削 


Method 做法
1. To make base, stir all ingredients until combined. Press mixture into base 0f 23cm (9-inch) cake tin.
饼底 :将所有的材料混匀,然后紧紧压在一个23公分(9寸)烘盘里。

2. To make filling, beat cream cheese and sugar until smooth. Beat in eggs, one at a time, beating well after each addition.
芝士馅 :将奶油芝士和糖搅拌成软滑,逐粒将鸡蛋加入,伴匀。

3. Then beat in sour cream, corn starch, grated lemon rind and lemon juice until blended.
加入酸奶油,粟粉,柠檬皮削和柠檬汁,搅拌伴匀。

4. Pour filling into cake tin. Bake in preheated oven at 170℃ for 40-45 minutes or until cooked.
Remove from heat and leave to cool. Chill in fridge.
把芝士馅倒入烘盘里,盛入预热烤箱以170℃烘约40-45分钟或至熟;取出待冷却,存入冰箱冷冻。



5. Decorate with lemon peel shreds, glaze with decorgel.
以切丝柠檬皮装饰,在涂抹少许果冻即可。
